Gellan gum is a new type of high Polymer gel Exopolysaccharides produced by fermentation with sphingomonas paucimobilisaby as producing strain and monosaccharide or disaccharide as raw material under the conditions of special controlled fermentation procedure and advanced production technology including purifying, extracting, drying and grinding. Gellan Gum is mainly divided into two types which are low acyl gellan gum and high acyl gellan gum. High Acyl Gellan gum is widely used in many fields such as food, beverage, pharmaceuticals, cosmetics and food packaging industry as gelling agent, thickener and stabilizer.

High Acyl Gellan Gum is Light-yellow powder,with following features:
1. Gels formed are of excellent elasticity;
2. Very good dispersion and hydration characteristics in water;
3. Low protein reaction and acid stability;
4. Pseudoplastic makes food with good taste.

Applications of Gellan Gum:
Gellan gum has become a perfect substitutes of agar,carrageenan due to its excellent gelling performance. Gellan Gum has been widely applied in beverage, jelly, fruits jam, bakery filling, dairy products, meat processing, desserts, shortening, ice cream, jelly drops and pet food as thickener, stabilizer, gelling agent, suspending agent and film-forming agents. Gellan Gum can also be used in culture medium, pharmaceutical, air-freshener and toothpaste.
High Acyl Gellan Gum is commonly applied in non-transparent food and beverages, such as grain drinks, dairy products and drinks, plant protein drinks, nutrition drinks, fresh fruits/ vegetables juice and meat processing.
High Acyl Gellan Gum can be compounded with soluble salts in application. The suspension and stabilizing performance should be assisted by cations.China Thickener
